Roast 2 cookie sheets of vegetables that can be stored in refrigerator. Vegetables can be put in egg dishes, used in sandwiches, frozen pizza topping and as a side dish.

Pre-heat oven to 400 F

Choose from eggplant, zucchini, squash, mushrooms, red, yellow & green peppers.

Dice vegetables into 1/4 “ cubes

Season with sea salt, ground black pepper and herbs. Mix in a tablespoon of olive oil. Line a cookie sheet with wax paper and spray with oil. Spread vegetables evenly onto cookie sheet. Cook for 20 minutes or until done.
