Vegetable Frittata

3 eggs

¼ cup Red peppers

¼ cup Green peppers

¼ cup chopped onions

 

Put 1 table spoon olive oil in a hot frying pan. Whisk eggs and season with sea salt and ground pepper to your liking and let rest. In the meantime, sauté vegetables until onions are soft. Add whisked eggs to vegetables and let the eggs set. Check to see if eggs have been cooked at the bottom. With a large plate cover the eggs and invert carefully. Slide the eggs off the plate into the pan and cook for a few more minutes.

Serve with whole wheat toast
